Ingredients

  • 2 cups Minute® Ready to Serve Basmati Rice
  • 1/2 cup grape tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 4 fresh basil leaves, torn
  • 1 tsp garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Step 1

  • Heat rice according to package directions.

    Step 2

  • In small bowl, toss together tomatoes, feta, oil, basil, garlic, salt and black pepper.

    Step 3

  • Combine rice with tomato mixture.

    Recipe Variation

    As a hearty variation, add shredded cooked chicken, chopped cured chorizo sausage or canned beans or lentils.
