Birria with Rice

This quick take on a slow-braised Mexican birria stew uses store-bought pulled pork for quick prep. Serve over Cilantro Lime Rice, and enjoy!

Ingredients

  • 1 cup Minute®Cilantro & Lime Jasmine Rice Cups
  • 1/2 cup store-bought pulled pork
  • 1/2 cup sodium-reduced beef broth
  • 2 tbsp tomato juice
  • 1 tbsp canned chipotle in adobo, minced
  • 1/4 avocado, pitted, peeled and diced

  • Skip the slow-braising and get straight to the good stuff: this Latin American-inspired stew has all those flavors you’re craving but is ready in less than 10 minutes!   • Heat rice according to package directions.

    Step 2

  • In a medium, microwave-safe bowl, combine pork, broth, tomato juice and chipotle. Cover and microwave on HIGH, stirring once or twice during cooking, for 2-3 mins or until heated through.

  • Serve pulled pork mixture over rice. Garnish with avocado.

    For birria tacos, combine pork mixture, rice and shredded cheese in a tortilla; dip in broth.

Using Ripe Avocados
