Birria with Rice

Ingredients

  • 2 cups Minute® Ready to Serve Cilantro Lime Rice
  • 1/2 cup store-bought pulled pork
  • 1/2 cup sodium-reduced beef broth
  • 2 tbsp tomato juice
  • 1 tbsp canned chipotle in adobo, minced
  • 1/4 avocado, pitted, peeled and diced

  • Heat rice according to package directions.

  • In medium microwave-safe bowl, combine pulled pork, broth, tomato juice and chipotle; cover and microwave on High, stirring once or twice during cooking, for 2 to 3 mins or until heated through.

  • Serve pulled pork mixture over rice. Garnish with avocado.

    For birria tacos, combine pork, rice and shredded cheese in a tortilla; dip in broth.
