Ingredients

  • 2 cups Minute® Instant Jasmine Rice, uncooked
  • 1/3 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tsp Dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp each salt and pepper
  • 2 Tbsp finely chopped fresh mint
  • 2 Tbsp finely chopped fresh dill
  • 4 cups baby arugula
  • 1 cup peas, blanched
  • 1/2 cup finely crumbled feta cheese

Instructions

  • Step 1

  • Cook jasmine rice according to package directions. Let cool completely.

    Step 2

  • In a large bowl, whisk together oil, vinegar, mustard, garlic, salt and pepper; add rice, mint and dill. Toss gently. Stir in arugula, peas and feta.

    Recipe Tips

    Substitute goat cheese for feta cheese and spinach for arugula if desired.

    For an easy stuffed tomato, hollow out campari tomatoes or small vine-ripened tomatoes and stuff with rice salad.
