This refreshing and light rice salad combines fragrant Minute® Instant Jasmine Rice, fresh herbs, leafy arugula and zesty feta cheese into one impressive dish.
Cook rice according to package directions. Allow to cool completely.
Whisk together oil, vinegar, mustard, garlic, salt and pepper in a large bowl. Add rice, dill and mint and toss gently to combine.
Stir arugula, peas and feta into salad.
Substitute goat cheese for the feta cheese, and use spinach in place of the arugula, if desired.
For an easy stuffed tomato recipe, simply hollow out small, vine-ripened tomatoes and stuff them with the rice salad. Sprinkle a little feta or goat cheese on top of each tomato before serving.

Sometimes, something as simple as a vinaigrette or dressing can upgrade the flavor of your dish from just OK to amazing! While we always suggest keeping a bottle of your favorite store-bought variety on hand, you can also make your own dressing using a few pantry ingredients: olive oil, vinegar, mustard, garlic, salt and pepper.
Make extra dressing to save in your fridge for later so that you can use it on other rice salads like our Quick Chicken, Rice and Veggies or Harvest Rice.
