With fresh mint and dill, this tasty rice salad makes an easy make-ahead side dish for holiday entertaining or buffet tables.
Cook jasmine rice according to package directions. Let cool completely.
In a large bowl, whisk together oil, vinegar, mustard, garlic, salt and pepper; add rice, mint and dill. Toss gently. Stir in arugula, peas and feta.
Substitute goat cheese for feta cheese and spinach for arugula if desired.
