Ingredients

  • 1 cup Minute® Ready to Serve Chicken Flavored Rice
  • 1/2 cup fresh green beans, cut diagonally into 1/2 inch pieces
  • 1/2 cup sliced yellow squash
  • 2 tbsp herbed vinaigrette
  • 3/4 cup (6 oz) diced cooked chicken breast

Instructions

  • With just one cup of veggies, one cup of chicken-flavored rice, zesty herbed vinaigrette and sliced chicken breast, you’ve got a complete meal in just 5 minutes!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine green beans and squash in a small, microwave-safe bowl.

    Step 3

  • Microwave on HIGH for 2 minutes.

    Step 4

  • Stir in rice and vinaigrette.

    Step 5

  • Add chicken and microwave on HIGH for 1-2 more minutes, just until chicken is heated through.

    Recipe Tips

    Use leftover grilled chicken breast and veggies or rotisserie chicken in this dish.

    Switch things up by replacing the squash and green beans with other veggies of your choice, such as broccoli, tomato or zucchini.
