Corned Beef Irish Stew

Ingredients

  • 1 cup Minute® Instant White Rice
  • 2 tbsp vegetable oil
  • 2 cans of corned beef (12 oz), sliced
  • 1 can of cabbage (15 oz), drained
  • 1 cup Irish stout beer
  • 2 cups beef broth
  • 1 can sliced mushrooms (4 oz), drained
  • 1 can sliced carrots (8 oz), drained
  • 2 tbsp powdered brown gravy
  • Salt and pepper to taste

Instructions

  • For some flavor of Ireland, try this Corned Beef Irish Stew. Packed with vegetables and bursting with beef, it’s a meal that truly satisfies.

    Step 1

  • Heat rice according to package directions. 

    Step 2

  • In a large pan, heat the vegetable oil over medium heat. Add the sliced corned beef and cook for 3 minutes or until lightly browned. Remove the corned beef from the pan and set it aside. 

    Step 3

  • In the same pan, add the cabbage. Sauté for 2 minutes or until softened. Add the mushrooms and carrots and stir to combine everything. 

    Step 4

  • In a medium bowl, whisk the powdered gravy mix with the Irish stout beer until well combined. 

    Step 5

  • Pour the beer and gravy mixture into the pan with the vegetables. Stir everything together to coat the vegetables evenly. Add the beef broth to the pan and bring to a simmer. Reduce the heat to low and cover the pan. Cook for 5 minutes. 

    Step 6

  • Add the cooked sliced corned beef back into the pan and gently mix it with the vegetables and gravy. Simmer for another 5 minutes to ensure everything is heated through. 

    Step 7

  • Divide into 4 plates and serve over rice.
