Let Minute® Rice warm you up with this quick recipe for Easy Beef Stew with Rice. Served over a bowl of white rice and cooked with plenty of vegetables, it’s comfort in a bowl.
Combine beef, flour, garlic powder, salt and pepper in a large bowl. Toss together until beef is evenly coated. Heat oil in a large skillet over medium-high heat. Add beef and sauté for 5-7 minutes, or until browned and cooked through. Using slotted spoon, transfer beef to a bowl and set aside.
Add onion and mushrooms to skillet. Cook for 3-5 minutes, or until onion is translucent. Stir in stewed tomatoes, broth and carrots, and bring to a boil. Reduce heat to low. Cover and simmer, stirring frequently, for 12-15 minutes, or until stew is thickened.
Meanwhile, prepare rice according to package directions.
To serve, spoon stew over rice.
