  • 1 can (14.5 oz) stewed tomatoes
  • 1 cup beef broth
  • 1 cup frozen sliced carrots, thawed

Instructions

  • Let Minute® Rice warm you up with this quick recipe for Easy Beef Stew with Rice. Served over a bowl of white rice and cooked with plenty of vegetables, it’s comfort in a bowl.

    Step 1

  • Combine beef, flour, garlic powder, salt and pepper in a large bowl. Toss together until beef is evenly coated. Heat oil in a large skillet over medium-high heat. Add beef and sauté for 5-7 minutes, or until browned and cooked through. Using slotted spoon, transfer beef to a bowl and set aside.

    Step 2

  • Add onion and mushrooms to skillet. Cook for 3-5 minutes, or until onion is translucent. Stir in stewed tomatoes, broth and carrots, and bring to a boil. Reduce heat to low. Cover and simmer, stirring frequently, for 12-15 minutes, or until stew is thickened.

    Step 3

  • Meanwhile, prepare rice according to package directions.

  • To serve, spoon stew over rice.

    Recipe Tips

    Boost the nutrients and color of this dish by adding 1/2 cup of baby peas along with the carrots.

    For more flavor, add 2 teaspoons of finely chopped fresh rosemary along with the mushrooms. Then, add 1/4 cup red wine along with the broth.

    Make a double batch of this dish and freeze half of it for up to 3 months. Thaw the stew in the fridge the night before you want to eat it. Make rice just before serving for a warm and hearty dinner even on busy nights!
