  • In a large bowl, toss together beef, flour, garlic powder, salt and pepper until beef is coated evenly. Heat oil in large skillet; cook beef for 3 to 5 minutes or until browned. Using slotted spoon, transfer beef to bowl; set aside.

  • Add onion and mushrooms to skillet; cook for 3 to 5 minutes or until onion is translucent. Stir in carrots, stewed tomatoes and broth bring to boil. Reduce heat to low; cover and simmer, stirring frequently, for 10 to 15 minutes or until stew is thickened.

  • Meanwhile, prepare rice as directed on package. To serve, spoon stew over rice.


Recipe Tips

For a pop of green, stir in 1/2 cup baby peas along with the carrots. Gourmet tip: Add 2 tsp finely chopped fresh rosemary along with the mushrooms, and 1/4 cup red wine along with the broth. Meal Prep: Make a double batch and freeze half for up to 3 months. Thaw in the fridge the night before and make rice just before serving for a warm and hearty dinner even on busy nights!
