Step 1
Drain pineapple and reserve juice. Combine juice with soy sauce and add enough water to equal 2 cups of liquid. Set aside.
Step 2
Heat a large skillet over medium-high heat. Add the oil and chicken. Brown for 5 minutes.
Step 3
Add asparagus, carrots, mushrooms, garlic and ginger and cook for an additional 3 minutes, or until the internal temperature of the chicken reaches 170°F.
Step 4
Add pineapple juice and soy sauce mixture to skillet. Stir in rice and pineapple chunks. Bring to a boil, cover and simmer for 5 minutes.
Step 5
Stir in eggs, green onions and sesame seeds.
