  • 1 can (20 oz) pineapple chunks
  • 1/2 cup soy sauce
  • water
  • 1 tbsp canola oil
  • 6 boneless, skinless chicken thighs, cubed
  • 1 cup asparagus, trimmed and sliced into 1-inch pieces
  • 1 cup shredded carrot
  • 1 can (5.5 oz) mushrooms, drained
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger root, minced
  • 2 cups Minute® White Rice
  • 2 eggs, scrambled
  • 1/2 cup sliced green onion, sliced
  • 2 tsp toasted sesame seeds

    Step 1

  • Drain pineapple and reserve juice. Combine juice with soy sauce and add enough water to equal 2 cups of liquid. Set aside.

    Step 2

  • Heat a large skillet over medium-high heat. Add the oil and chicken. Brown for 5 minutes.

    Step 3

  • Add asparagus, carrots, mushrooms, garlic and ginger and cook for an additional 3 minutes, or until the internal temperature of the chicken reaches 170°F.

    Step 4

  • Add pineapple juice and soy sauce mixture to skillet. Stir in rice and pineapple chunks. Bring to a boil, cover and simmer for 5 minutes.

    Step 5

  • Stir in eggs, green onions and sesame seeds.

  • If you’re not a fan of the vegetables we’ve suggested, feel free to make this dish your own and swap them out for veggies you love. Chopped broccoli, sliced cabbage and corn are great substitutions.
