Heat rice according to package directions.
Heat oil in in a large wok or skillet over medium heat. Add carrots, celery and onion and stir-fry for 2 minutes.
Stir in rice, ham and soy sauce. Continue to stir-fry for 3 minutes, or until heated through.
Pour in eggs and cook, stirring constantly, about 2 minutes, or until eggs are done. Serve with additional soy sauce, if desired.
