Combine remaining pineapple juice with water to equal 2 cups.
Prepare rice and quinoa according to package directions, using juice mixture. Set aside.
Heat oil in a large, nonstick skillet over medium-high heat. Add carrots, red onion, water chestnuts, and pineapple chunks, and cook for 2-4 minutes, until starting to soften.
Add plum sauce mixture and bring to a boil. Cook, stirring until slightly thickened.
Stir in broccoli and chicken and heat through. Serve chicken mixture over rice and quinoa.
