Ingredients

  • 1 can (20 oz) pineapple chunks, drained, juice reserved and divided
  • 1/3 cup plum sauce
  • 3 tbsp rice vinegar
  • 3 tbsp low sodium soy sauce
  • 2 tsp cornstarch
  • 2 bags Minute® Rice & Quinoa
  • 1 tbsp canola oil
  • 1 cup shredded carrots
  • 1/2 cup sliced red onion
  • 1/2 cup sliced water chestnuts
  • 3 cups broccoli florets, cooked
  • 2 cups cubed, rotisserie cooked chicken

Instructions

  • Enjoy a taste of Hawaii with this delicious Chicken & Vegetable Stir-Fry with Rice and Quinoa, featuring savory rotisserie chicken and sweet, juicy chunks of pineapple.

    Step 1

  • Combine 1/3 cup pineapple juice, plum sauce, rice vinegar, soy sauce and cornstarch in a small bowl. Set aside.

    Step 2

  • Combine remaining pineapple juice with water to equal 2 cups.

    Step 3

  • Prepare rice and quinoa according to package directions, using juice and water mixture.

    Step 4

  • Meanwhile, heat oil in a large, nonstick skillet over medium-high heat. Add carrots, red onion, water chestnuts, and pineapple chunks, and cook for 2-4 minutes, until starting to soften.

    Step 5

  • Add plum sauce mixture and bring to a boil. Cook, stirring until slightly thickened.

    Step 6

  • Stir in broccoli and chicken and heat through. Serve chicken mixture over rice and quinoa.
