  • 1 cup Minute® White Rice
  • 1 tbsp canola oil
  • 1 lb ground beef
  • 1 can (15 oz) chili beans
  • 1 can (10 oz) diced tomatoes and green chilies
  • 1 bag (12 oz) crushed tortilla chips
  • 1 lb Cheddar cheese, cut into cubes, divided
  • 1/2 cup sour cream (optional)
  • 2 green onions, sliced (optional)


  • Combine your favorite Tex-Mex flavors into this easy rice bake! A perfect family meal, everyone will love the combination of cheesy chili beans, rice and Mexican-flavored ground beef. This all-in-one dish is ready in 30 minutes for your next lunch or dinner.

    Step 1

  • Preheat oven to 350°F.

    Step 2

  • Prepare rice according to package directions; set aside.

    Step 3

  • Meanwhile, heat oil in a large, nonstick skillet over high heat. Add beef and cook for 5 minutes, or until browned and cooked through. Drain off excess fat.

    Step 4

  • Add rice, beans and tomatoes and green chilies to skillet, and reduce heat to low. Cook, stirring to combine, until heated through.

    Step 5

  • Cover bottom of a 9 x 13-inch baking dish with chips. Layer half of cheese over chips.

    Step 6

  • Top chips and cheese with rice mixture. Top with remaining cheese.

    Step 7

  • Bake, uncovered, for 15 minutes, or until cheese is melted. Garnish with dollops of sour cream, then green onions, if using.
