Ingredients

  • 2 cups Minute® Jasmine Rice
  • 1/3 cup olive oil
  • 3 tbsp lemon juice
  • 1 shallot, minced
  • 1 tsp grainy mustard
  • 1 tsp honey
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 cups baby spinach
  • 1/3 cup crumbled feta cheese
  • 1/3 cup pumpkin seeds, toasted
  • 1 lb packed, cooked golden or red beets, diced

Instructions

  • This Roasted Beet and Rice Salad contains a stunning mix of golden beets, tender spinach and creamy feta cheese, dressed with a tangy lemon vinaigrette. This recipe serves up to 4 people and takes fewer than 20 minutes to prepare, leaving you time to decide when to enjoy it — lunch or dinner?

    Step 1

  • Prepare rice according to package directions. Allow to cool completely.

    Step 2

  • In a large bowl, whisk together oil, lemon juice, shallot, mustard, honey, lemon zest, salt and pepper. Add rice to bowl along with spinach, feta and pumpkin seeds. Toss to coat.

    Step 3

  • Arrange salad on a serving dish. Top with beets.
