Spanish Meatballs

  • 4 frozen precooked meatballs, thawed
  • 1 tbsp olive oil
  • 1/4 cup crushed tomato
  • 1 cup Spanish Rice Cups
  • 1/2 tbsp beef stock
  • 1 tbsp red wine
  • 1 tbsp onion, minced
  • 1 tsp paprika
  • 1/8 tsp salt


  • For a fast and flavorful meal or appetizer, these Spanish Meatballs – packed with fresh vegetables, savory broth, and Spanish Rice Cups – are seasoned to perfection!

    Step 1

  • Heat the 1 tsp of oil in a pan over medium heat. 

    Step 2

  • Add meatballs and cook for 5-10 minutes, depending on size. Remove meatballs and set aside once heated through. 

    Step 3

  • Heat the rice according to package instructions. 

    Step 4

  • Add onions to pan and cook until softened (2-3 minutes) 

    Step 5

  • Add crushed tomatoes, beef stock, red wine, salt and paprika. Make sure to mix everything together. Bring to a simmer. 

    Step 6

  • Add meatballs and sauce on top of the rice. 

    Recipe Tip

    Top with Manchego or Parmesan cheese, if desired.

Consider making a double batch and storing; it will be easier on you to relax knowing that you always have frozen meatballs on hand for a quick meal or a packed lunch. Meatballs should be frozen on a baking sheet for a few hours without touching before placing them in freezer-safe bags. For simple peeling, line the sheet with parchment paper. To prevent drying out, carefully place another sheet of parchment on top. Put them in bags after a few hours and freeze them again for three to four months!
