For a fast and flavorful meal or appetizer, these Spanish Meatballs – packed with fresh vegetables, savory broth, and Minute® Ready to Serve Spanish Rice – are seasoned to perfection!
Heat the 1 tsp of oil in a pan over medium heat.
Add meatballs and cook for 5-10 minutes, depending on size. Remove meatballs and set aside once heated through.
Heat the rice according to package instructions.
Add onions to pan and cook until softened (2-3 minutes)
Add crushed tomatoes, beef stock, red wine, salt and paprika. Make sure to mix everything together. Bring to a simmer.
Add meatballs and sauce on top of the rice.
Top with Manchego or Parmesan cheese, if desired.
