Spanish Meatballs

Ingredients

  • 4 frozen precooked meatballs, thawed
  • 1 tbsp olive oil
  • 1/4 cup crushed tomato
  • 1 cup Minute® Ready to Serve Spanish Rice
  • 1/2 tbsp beef stock
  • 1 tbsp red wine
  • 1 tbsp onion, minced
  • 1 tsp paprika
  • 1/8 tsp salt

Instructions

  • For a fast and flavorful meal or appetizer, these Spanish Meatballs – packed with fresh vegetables, savory broth, and Minute® Ready to Serve Spanish Rice – are seasoned to perfection!

    Step 1

  • Heat the 1 tsp of oil in a pan over medium heat. 

    Step 2

  • Add meatballs and cook for 5-10 minutes, depending on size. Remove meatballs and set aside once heated through. 

    Step 3

  • Heat the rice according to package instructions. 

    Step 4

  • Add onions to pan and cook until softened (2-3 minutes) 

    Step 5

  • Add crushed tomatoes, beef stock, red wine, salt and paprika. Make sure to mix everything together. Bring to a simmer. 

    Step 6

  • Add meatballs and sauce on top of the rice. 

    Recipe Tip

    Top with Manchego or Parmesan cheese, if desired.
