This simple Vegetarian Meatball dinner recipe packs a fiesta of flavors with avocado, salsa and Minute® Ready to Serve Cilantro Lime Rice.
Heat rice according to package directions.
In small microwave-safe bowl, toss together meatballs and salsa. Microwave on High for 60 to 90 secs or until heated through.
Stir rice into meatball mixture. Top with avocado and feta.
Substitute plant-based cheese for crumbled feta if preferred.
