Ingredients

  • 1 cup Minute® Ready to Serve Cilantro Lime Rice
  • 4 prepared vegetarian or plant-based meatballs
  • 1/3 cup salsa
  • 1/4 avocado, pitted, peeled and sliced
  • 2 tbsp feta cheese, crumbled

Instructions

  • Step 1

  • Heat rice according to package directions.

    Step 2

  • In small microwave-safe bowl, toss together meatballs and salsa. Microwave on High for 60 to 90 secs or until heated through.

    Step 3

  • Stir rice into meatball mixture. Top with avocado and feta.

    Substitute plant-based cheese for crumbled feta if preferred.
