  • 1 cup Minute® Ready to Serve Multi-Grain Medley
  • 4 prepared frozen cooked meatballs
  • 1/2 cup tomato sauce
  • 1/3 cup baby kale
  • 1/4 cup sliced mushrooms
  • 1/4 cup shredded mozzarella cheese


  • This saucy, Italian meatball and multigrain rice bowl is perfect for a quick lunch or dinner! 

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, microwave meatballs, sauce, baby kale and mushrooms in a microwave-safe dish on MEDIUM-HIGH heat for 2 to 3 minutes or until meatballs are heated through and mushrooms are tender.

    Step 3

  • Serve rice in a bowl topped with meatball mixture. Sprinkle mozzarella over top.

    Recipe Tips

    For more authentic, Italian flavor, replace the mozzarella in the recipe with grated Parmesan cheese. Or use both types of cheese, for an extra-cheesy meal!
