Prepare rice and quinoa according to package directions.
Place the acorn squash halves sliced side down in a microwave safe bowl with 2 tbsp of water. Place in a microwave for 10 minutes.
Brown sausage for 5-7 minutes.
Add celery, onion, garlic, and red pepper flakes. Cook for 2-3 minutes, until the onion is translucent.
Add kale and cook for an additional 2-3 minutes, until kale is wilted.
Remove pan from heat and stir in dried cherries, rosemary, thyme, and rice, and quinoa. Season with salt and pepper.
Preheat oven to 400°F. Scoop rice mixture into cooked squash halves. Sprinkle each with Parmesan cheese.
Bake for 10-12 minutes, until the topping begins to brown. Serve with extra filling.
Acorn Squash can also be cooked in the oven for extra flavor. Drizzle each squash half with 1/2 tablespoon oil. Place cut-side-down on a foil-lined baking sheet and roast for 40-45 minutes, or until squash is tender.
