Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice
  • 4 tsp cranberry sauce
  • 2 tbsp balsamic vinaigrette
  • 2 cups packed baby kale
  • 1/2 cup cooked turkey, shredded
  • 1/2 apple, seeded and chopped
  • 2 tbsp chopped pecans

Instructions

  • This simple fall-inspired salad is tasty and filled with all kinds of flavor. It’s also a great way to use up any holiday meal leftovers! Give your meal a whole grain touch by using Minute® Ready to Serve Brown Rice.

    Step 1

  • Microwave rice according to package directions.

    Step 2

  • In large bowl, whisk together cranberry sauce and vinaigrette until blended; add kale, turkey and apple, rice and pecans.

    Step 3

  • Toss until well combined.
