  • 1/2 cup (3 oz) cooked, seasoned ground beef or sausage
  • 1 cup Minute® Ready to Serve Brown Rice & Quinoa
  • 1 red bell pepper
  • 1 tbsp water
  • 1/4 cup crushed tomatoes, preferably fire-roasted
  • 1/4 cup shredded mozzarella cheese
  • chopped, fresh basil leaves (optional)
  • Parmesan cheese (optional)

    Step 1

  • Heat seasoned ground beef according to package directions.

    Step 2

  • Heat quinoa and rice according to package directions.

    Step 3

  • Remove top and seeds from bell pepper.

    Step 4

  • Place bell pepper in a small, microwave-safe dish.

    Step 5

  • Add water to inside of pepper.

    Step 6

  • Microwave on HIGH for 3 minutes, or until the pepper is softened.

    Step 7

  • Combine quinoa and rice, beef, tomatoes, mozzarella cheese and basil, if using, in a small bowl.

    Step 8

  • Stuff mixture into prepared bell pepper.

    Step 9

  • Microwave on HIGH for 1 to 2 minutes, or until heated through.

    Step 10

  • Top with Parmesan cheese, if using.
