  • Heat seasoned ground beef according to package directions.

  • Heat quinoa and Brown rice according to package directions.

  • Remove top and seeds from bell pepper.

  • Place bell pepper in a small microwave-safe dish.

  • Add 1 tablespoon water inside pepper.

  • Microwave on HIGH 3 minutes, or until pepper is softened.

  • In a small bowl, combine quinoa and brown rice with garlic, tomatoes, beef or sausage, mozzarella cheese and basil, if desired.

  • Stuff mixture into Prepared bell pepper.

  • Microwave on HIGH 1 to 2 minutes, or until heated through.

  • Top with Parmesan cheese, if desired.
