Step 1
Heat rice according to package directions.
Step 2
Combine rice, egg whites, spinach and sausage in a medium bowl. Stir to blend well.
Step 3
Coat a medium, microwave-safe dish with nonstick cooking spray. Pour rice mixture into dish and microwave on HIGH for 2-3 minutes, or until the center is set.
