Banana Peanut Butter Rice Bites

Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice
  • 1/4 cup crunchy peanut butter
  • 3/4 cup dark chocolate chips
  • 1 large banana, cut into 1/4-inch thick slices (about 16)

Instructions

  • Step 1

  • Microwave brown rice according to package directions. Stir in peanut butter until well combined.

    Step 2

  • In a microwave-safe dish, microwave chocolate chips on Medium, stirring every 30 seconds, for 2 to 3 minutes or until melted and smooth. Set aside.

    Step 3

  • Meanwhile, spread 1 tbsp rice mixture on each of the banana slices.

    Step 4

  • Place on parchment paper-lined tray; drizzle with melted chocolate. Freeze for 1 to 2 hours or until chocolate is set and bananas are frozen.

  • Recipe Tips

    Bites can be frozen in an airtight container for up to 1 week.

    Substitute crunchy almond butter for peanut butter or, for nut-free bars, use soy or sunflower butter.
