For a speedy and delicious snack, give these whole grain one-bite treats a try with brown rice, banana, chocolate chips and crunchy peanut butter.
Microwave brown rice according to package directions. Stir in peanut butter until well combined.
In a microwave-safe dish, microwave chocolate chips on Medium, stirring every 30 seconds, for 2 to 3 minutes or until melted and smooth. Set aside.
Meanwhile, spread 1 tbsp rice mixture on each of the banana slices.
Place on parchment paper-lined tray; drizzle with melted chocolate. Freeze for 1 to 2 hours or until chocolate is set and bananas are frozen.
Bites can be frozen in an airtight container for up to 1 week.
Substitute crunchy almond butter for peanut butter or, for nut-free bars, use soy or sunflower butter.
