Ingredients

  • 1 cup Minute® Ready to Serve Organic Brown Rice
  • 1/2 cup Greek style yogurt with honey
  • 1/4 tsp ground cinnamon
  • 1/2 cup sliced fresh fruit
  • 2 tbsp granola

  • Step 1
    Heat rice according to package directions. Allow to cool.

  • Step 2
    Combine rice, yogurt and cinnamon in a medium bowl.

  • Step 3
    Spoon half of rice mixture into a tall glass or parfait dish. Top with 1/2 of the fruit.

  • Step 4
    Repeat layers. Garnish with granola.

    To make the parfait vegan, simply substitute the Greek yogurt with your favorite, dairy-free variety.

No more skipping breakfast! This easy-to-assemble, whole grain parfait is layered with creamy Greek yogurt, organic brown rice, cinnamon, granola and your choice of fruit. A parfait is a go-to meal for a quick breakfast, snack or dessert. This sophisticated dish is also ready in just 5 minutes!

This recipe can easily be doubled or tripled if you’ve got a few more mouths to feed. For best results, take a tall glass or parfait dish and add the first layer of the combined rice and yogurt to the bottom of the dish. This creates an even layer that lies flat along the base of the bowl. Then, add a layer of 1/2 of the total amount of berries and fruit, a thinner layer of rice and yogurt and then the remaining fruit. Top with as much of your favorite granola as you like and serve with a huge spoon!

For a cute dish to serve at brunch with friends or family, make this parfait recipe in small, individual jars. Using small jars adds a show-stopping aesthetic, and makes eating the parfait convenient and fun. If you want to go one step further and decorate your parfait, drizzle warmed honey across the top of the granola. The honey doubles as a natural sweetener and helps bring out the flavors of the fruit, yogurt and granola.

To make this dish into an impressive dessert, sprinkle some cacao nibs or chocolate shavings on top of the honey. You can even close the lid of the jar and take it to work or school. There’s nothing like a nice yogurt parfait on a hot summer or spring day. Take it on a picnic for a refreshing addition to the rest of your packed lunch.

With so many options available for vegan yogurt, it’s extremely easy to make this dish dairy-free. Substitute Greek yogurt for a non-dairy option, if needed.
