Instructions

  • Plan your weekly meals with this muesli in mind and you’ll never stress over a last-minute breakfast again. Just imagine waking up, grabbing a jar of this muesli and listening to your favorite podcast on your way to work. Talk about a blissful morning!

    Step 1

    Prepare rice and quinoa according to package directions, using milk in place of water. Set aside.

    Step 2

    Stir together orange zest, orange juice and chopped apple in a medium bowl.

    Step 3

    Add dried fruit, 1/2 cup chopped nuts, yogurt, honey, vanilla, ground cinnamon and rice and quinoa. Stir to combine.

    Step 4

    Cover the bowl and place the muesli mixture into the refrigerator to cool for 1 hour or overnight.

    Step 5

    To serve, top with reserved nuts and fresh seasonal fruit, if using.

    Recipe Tips

    Change up the flavors in this recipe by making it with different types of dried fruits and nuts.

    For the dried fruit, try prunes, raisins, dried apricots, apples or cranberries. Experiment with chopped almonds, cashews, peanuts or pistachios for the nuts.

    For a different flavor, substitute the milk in the recipe with your favorite dairy-free milk, such as soy, oat, coconut or almond.
