Ingredients

  • 1 can (15 oz) mandarin orange segments
  • 1 tsp ground ginger
  • 2 cups Minute® Brown Rice
  • 1 can (8 oz) sliced water chestnuts, drained and chopped
  • 1/2 cup sliced celery
  • 1/2 cup Asian sesame salad dressing
  • 3 green onions, thinly sliced

Instructions

    Step 1

  • Drain mandarin oranges, reserving liquid. Add enough water to reserved liquid to measure 2 cups. Stir in ginger.

    Step 2

  • Prepare rice according to package directions, substituting reserved mandarin orange liquid for water. Refrigerate cooked rice for 30 minutes.

    Step 3

  • Add water chestnuts, celery, dressing and green onions; mix lightly. Gently stir in oranges.

Approach this recipe in two steps. First, cook the rice and prep the vegetables. Then, assemble. The first part requires you to simmer the brown rice in a mix of mandarin orange juice and water. While the rice is cooking, prepare the dressing, onions, water chestnuts and celery.

After the rice has finished cooking, it will need to cool so that this rice dish can be served chilled. Keep it in the fridge for 30 minutes or overnight. Assemble all the ingredients just before you head out the door.
