Step 1
Heat rice according to package directions. Set aside and allow to cool.
Step 2
Toss greens with half the vinaigrette in a medium bowl and place on a serving plate.
Step 3
Toss rice, mozzarella balls, tomatoes, basil and pepper with remaining vinaigrette.
Step 4
Place mixture on top of greens. Sprinkle with Parmesan cheese and drizzle with balsamic reduction, if using.
