  • Heat rice according to package directions.

  • In a medium bowl toss greens with about half the vinaigrette and place on a serving plate.

  • Toss rice, tomatoes, mozzarella balls, basil and pepper with remaining vinaigrette.

  • Place mixture on top of greens. Sprinkle with Parmesan cheese and drizzle balsamic reduction, if desired.


Recipe Tips

Small bite-sized fresh mozzarella balls are also called ciliegine.  You can substitute Sliced or shredded mozzarella.
