Ingredients

  • 1 bag Minute® Rice and Quinoa, uncooked
  • 1/4 cup onion, finely chopped
  • 2 eggs, beaten
  • 1/4 cup milk
  • 2 tbsp cheddar cheese, shredded
  • 1 tbsp instant oatmeal
  • 1/4 tsp salt
  • Pinch of pepper
  • 3/4 cup apple sauce (Optional)

Instructions

  • Enjoy these delicious pancakes any time of day!

     Step 1

  • Heat rice according to package directions. Add onions, set aside, and keep warm. 

     Step 2

  • In a large bowl combine eggs, milk, cheese, oatmeal, salt and pepper.  Add rice and mix thoroughly. 

     Step 3

  • Heat large skillet on medium heat.  Coat with non-stick cooking spray.  Spoon 1/4 cup mixture onto griddle and flatten slightly.  Cook 2 minutes per side or until edges start to brown and pancake is set.  Remove to serving platter.  Do not stack to assure pancakes remain crisp.  

     Recipe Tip

    Serve with apple sauce.
