Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 3 tbsp heavy cream
  • 2 tbsp dulce de leche
  • 1 pkg (2.3 oz) chocolate mug cake mix
  • 2 tbsp peanut butter
  • 2 chocolate crème sandwich cookies

Instructions

  • Layers of decadence – from the cookie peanut butter topping down to the dulce de leche rice pudding – will surely satisfy your sweet tooth!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In 1 1/2-cup, microwave-safe mug, combine rice, cream and dulce de leche.

    Step 3

  • Prepare mug cake mix batter according to package directions. Spoon batter over rice mixture. Swirl in peanut butter, then crumble cookies over top.

    Step 4

  • Microwave on HIGH for about 3 minutes, or until set and rice is heated through. Let stand for 2 minutes.

    Recipe Tips

    Serve with a scoop of ice cream, if desired.

    For 2 servings, double the recipe and separate between 2 mugs.

What is Dulce de Leche
