  • 2 cups heavy cream
  • 1 cup milk
  • pinch of salt
  • 1 cup Minute® Instant White Rice
  • 1/3 cup mixed berry jam
  • 1 cup frozen mixed berries
  • 1/4 cup granulated sugar
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 1 cup granola


  • This dish of fruity goodness and creamy rice topped with crunchy granola is a yummy breakfast to wake up to, but also makes a lovely dessert.

    Step 1

  • Combine cream, milk and salt in a medium saucepan; bring to a boil, stirring often. Stir in rice and jam.

    Step 2

  • Reduce heat to medium-low; cook, stirring constantly, for 8 minutes, or until rice is tender and mixture starts to thicken. Stir in frozen berries and sugar; return to a boil. Remove from heat.

    Step 3

  • Beat egg yolks in a medium bowl. Gradually whisk 1/2 cup hot rice mixture into yolks.

    Step 4

  • Slowly stir egg mixture back into hot rice mixture. Add vanilla; cook over low heat, stirring constantly, for about 2 minutes, or until thickened. Allow pudding to cool for 15 minutes.

    Step 5

  • Serve pudding sprinkled with granola.

    Recipe Tips

    If you prefer to serve this rice pudding crumble cold, simply cover and refrigerate for 1-2 hours, until chilled.

    Top each serving with a dollop of whipped cream or ice cream, if desired.
