Summer Berry Rice Pudding Crumble

This fruity rice pudding with berries is finished with crunchy granola for a summer dessert that’s simple to make and tastes fantastic.

  • 2 cups heavy cream
  • 1 cup milk
  • 1 cup Minute® Instant White Rice
  • 1/3 cup mixed berry jam
  • 1 cup frozen mixed berries
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 1 box (10 oz) granola


  • This dish of fruity goodness and creamy rice topped with crunchy granola is a yummy breakfast to wake up to or serve as a lovely dessert.

    Step 1

  • In saucepan, combine cream and milk; bring to boil, stirring often. Stir in white rice and jam.

    Step 2

  • Reduce heat to medium-low; cook, stirring constantly, for 5 to 6 minutes or until rice is very tender and mixture is thickened. Stir in frozen berries; return to boil. Remove from heat.

    Step 3

  • Meanwhile, in bowl, beat egg yolks until frothy; gradually whisk 1/2 cup hot rice mixture into yolks.

    Step 4

  • Slowly stir egg mixture back into hot rice mixture; cook over low heat, stirring constantly, for about 2 minutes or until thickened. Transfer to lightly greased 8-inch baking dish. Let stand for 30 minutes.

    Step 5

  • Sprinkle granola over rice pudding. Serve warm.

    Serving Tips

    Alternatively, serve rice pudding crumble cold. Cover and refrigerate for 1 to 2 hours or until chilled.

    Top each serving with a dollop of whipped cream or ice cream if desired.
