This festive and delicious Salted Caramel Rice Pudding Ice Cream Pie makes a fabulous make-ahead dessert for summer barbecues!
What better way to cool off from the summer heat than with a delicious ice cream pie? With a chocolate cookie crumb pie crust filled with salted caramel rice pudding ice cream, you’ll be wanting to save this dessert for an all-year treat. Use aromatic Minute® Instant Jasmine Rice for best results.
In saucepan, combine cream and water; bring to boil over medium-high heat, stirring often.
Stir in jasmine rice and 3/4 cup dulce de leche. Reduce heat to medium-low; cook, stirring constantly, for 8 to 10 minutes or until rice is very tender and mixture is thickened. Stir in vanilla, cinnamon and sea salt. Let cool slightly.
Spoon rice pudding mixture into pie crust; smooth top. Drizzle with remaining dulce de leche. Freeze for 4 to 6 hours or until firm.
To serve, let stand at room temperature for 10 minutes or until softened slightly.
If desired, serve pie with a dollop of whipped cream; sprinkle with toffee bits, and chopped nuts, such as pecans, almonds or cashews.
