Ingredients

  • 1 1/2 cups heavy cream
  • 1 1/2 cups water
  • 1 1/2 cups Minute® Instant Jasmine Rice
  • 3/4 cup + 2 tbsp dulce de leche, divided
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 9” chocolate cookie crumb pie crust

Instructions

  • What better way to cool off from the summer heat than with a delicious ice cream pie? With a chocolate cookie crumb pie crust filled with salted caramel rice pudding ice cream, you’ll want to enjoy this dessert all-year round! For best results, use our aromatic Minute® Instant Jasmine Rice in this recipe.

    Step 1

  • Combine cream and water in a medium saucepan over medium-high heat; bring to a boil, stirring often.

    Step 2

  • Stir in rice and 3/4 cup dulce de leche. Reduce heat to medium-low. Cook, stirring constantly, for 8-10 minutes, or until rice is very tender and mixture has thickened. Stir in vanilla, cinnamon and sea salt. Let cool slightly.

    Step 3

  • Spoon rice pudding mixture into pie crust; smooth top. Drizzle with remaining dulce de leche. Freeze for 4 to 6 hours, or until firm.

    Step 4

  • To serve, let stand at room temperature for 10 minutes, or until slightly softened.

    Recipe Tip

    If desired, serve pie with a dollop of whipped cream. Or, sprinkle with toffee bits and chopped nuts, such as pecans, almonds or cashews.
