Our festive and delicious Salted Caramel Rice Pudding Ice Cream Pie is a fabulous, make-ahead dessert for summer barbecues!
What better way to cool off from the summer heat than with a delicious ice cream pie? With a chocolate cookie crumb pie crust filled with salted caramel rice pudding ice cream, you’ll want to enjoy this dessert all-year round! For best results, use our aromatic Minute® Instant Jasmine Rice in this recipe.
Combine cream and water in a medium saucepan over medium-high heat; bring to a boil, stirring often.
Stir in rice and 3/4 cup dulce de leche. Reduce heat to medium-low. Cook, stirring constantly, for 8-10 minutes, or until rice is very tender and mixture has thickened. Stir in vanilla, cinnamon and sea salt. Let cool slightly.
Spoon rice pudding mixture into pie crust; smooth top. Drizzle with remaining dulce de leche. Freeze for 4 to 6 hours, or until firm.
To serve, let stand at room temperature for 10 minutes, or until slightly softened.
If desired, serve pie with a dollop of whipped cream. Or, sprinkle with toffee bits and chopped nuts, such as pecans, almonds or cashews.
