Pumpkin Curry Turkey Soup with Rice

Ingredients

  • 2 cups Minute® Instant White Rice
  • 4 cups sodium-reduced turkey broth
  • 1 can (14 oz) pumpkin purée
  • 2 tbsp curry powder
  • 1 tsp pumpkin pie spice
  • 1 tsp fresh ginger, grated
  • 1 tsp cayenne powder
  • 1 tsp salt
  • 1 can (14 oz) coconut milk
  • 2 cups leftover cooked turkey, shredded

Instructions

  • This simple soup is the perfect way to use up a combination of different Thanksgiving leftovers like pureed pumpkin, turkey broth and sliced turkey all in one sweet and savory dish! Try with Minute® Instant White Rice for a delicious and comforting bowl of soup ready in 25 minutes.

    Step 1

  • In large saucepan, combine turkey broth, 1 cup water, pumpkin purée, curry powder, pumpkin pie spice, ginger, cayenne powder and salt; bring to boil.

    Step 2

  • Stir in coconut milk and turkey; return to boil. Reduce heat to medium-low; cook for 5 to 8 minutes or until turkey is heated through.

    Step 3

  • Stir in rice; cover and remove pan from heat. Let stand for about 5 minutes or until rice is tender.

    Recipe Tips

    Garnish with green onions and serve with a squeeze of lime juice if desired.

    Substitute chicken or vegetable broth for turkey broth.
