  • Melt butter in large saucepan over medium heat; cook onion, ginger and garlic for 3 to 5 minutes or until starting to soften. Stir in turmeric, salt, pepper, and curry powder; cook for 1 to 2 minutes or until fragrant.

  • Stir in coconut milk and water; bring to boil. Stir in rice. Cover and remove from heat. Let stand for about 5 minutes or until liquid is absorbed and rice is tender.

  • Fluff rice with fork. Sprinkle with cashews and cilantro.


Recipe Tips

• Substitute almonds for cashews. • Garnish with raisins or chopped dried apricots.
