Ingredients

  • 2 tbsp butter
  • 1 onion, diced
  • 1 tbsp minced fresh ginger
  • 2 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp curry powder
  • 1 can (14 oz) coconut milk
  • 1/3 cup water
  • 2 cups Minute® Jasmine Rice
  • 1/3 cup finely chopped toasted cashews
  • 2 tbsp finely chopped fresh cilantro

Instructions

  • Want rice that will wow a crowd? With fragrant turmeric and rich coconut milk, this golden rice makes a delightful side dish for grilled chicken, fish or kabobs.

    Step 1

  • Melt butter in a large saucepan over medium heat. Sauté onion, ginger and garlic for 3-5 minutes, or until starting to soften. Stir in turmeric, salt, pepper and curry powder. Cook for 1-2 minutes, or until fragrant.

    Step 2

  • Stir in coconut milk and water and bring to a boil. Stir in rice. Cover and remove from heat. Let stand for 5 minutes, until liquid is absorbed and rice is tender.

    Step 3

  • Fluff rice with a fork. Sprinkle with cashews and cilantro.
