Ingredients

  • 2 cups Minute® Jasmine Rice
  • 1/2 cup water
  • 2 tbsp brown sugar
  • 2 tbsp cornstarch
  • 2 tbsp creamy peanut butter
  • 1 tbsp red curry paste
  • 2 tsp minced garlic
  • 1 tsp chicken bouillon granules
  • 2 tbsp canola oil
  • 1 lb boneless, skinless chicken breast, cut into small strips
  • 1 small onion, thinly sliced
  • 2 cups fresh stir-fry vegetables (broccoli florets, mushroom slices, pea pods)
  • 1 can (14 oz) light coconut milk
  • 1/4 cup peanuts, crushed

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Meanwhile, combine water, brown sugar, cornstarch, peanut butter, red curry paste, garlic and bouillon granules in a small bowl. Stir until smooth. Reserve.

    Step 3

  • Heat oil in a large wok or skillet over medium-high heat. Stir-fry chicken and onions for 5 minutes.

    Step 4

  • Add vegetables and coconut milk and bring to a boil.

    Step 5

  • Add reserved sauce mixture and stir constantly until sauce thickens, about 1 minute.

    Step 6

  • Reduce heat and simmer for 10 minutes. Serve over cooked rice and garnish with peanuts.
