  • Prepare rice according to package directions. Let cool completely.

  • Meanwhile, heat canola oil in large skillet over medium-high heat; cook chicken, onion, carrot, garlic, ginger, salt and pepper for 5 to 8 minutes or until chicken starts to brown.

  • Stir in rice, chili paste, sesame oil and curry powder. Cook, stirring, for 2 to 3 minutes or until rice is well coated.

  • Stir in soy sauce, ketchup and water; cook for 1 minute. Stir in bean sprouts; cook for about 1 minute or until heated through.

  • Top with green onions and cilantro.
