BLT Rice Salad

  • 4 slices bacon, chopped
  • 1/2 cup onion, chopped
  • 2 cups water
  • 1 tsp salt
  • 2 cups Minute® White Rice
  • 2 cups Romaine lettuce leaves, torn or chopped
  • 1/2 cup mayonnaise
  • 1 tomato, chopped


  • Mention bacon, lettuce and tomato and most people’s eyes light right up! We’ve reimagined this favorite sandwich into an amazing rice salad. It’s perfect for your next meal, any time of year!

    Step 1

  • Cook the bacon in a large skillet set over medium-high heat until crisp, turning occasionally, about 5-7 minutes.

    Step 2

  • Drain bacon, reserving 2 tablespoons of drippings in the skillet. Crumble the bacon and set aside.

    Step 3

  • Add onions to the drippings in the skillet over medium heat. Cook, stirring, until crisp-tender, about 2-3 minutes. Add water and salt to the skillet and bring to a boil.

    Step 4

  • Stir in rice and cover. Remove from heat and let stand for 5 minutes. Fluff with a fork. Cool to room temperature.

    Step 5

  • Add lettuce, mayonnaise, tomato and reserved bacon. Stir gently to combine.

After cooking the bacon for this recipe, instead of cleaning the pan, use the drippings to cook the onions and rice. The drippings add loads of flavor! Let the flavors simmer together while the rice cooks in just 5 minutes. Let your rice cool and top it with ripe, chopped tomatoes, the crispy bacon, mayonnaise and chopped lettuce.
