Mention bacon, lettuce and tomato and most people’s eyes light right up! We’ve reimagined this favorite sandwich into an amazing rice salad. It’s perfect for your next meal, any time of year!
Step 1
Cook the bacon in a large skillet set over medium-high heat until crisp, turning occasionally, about 5-7 minutes.
Step 2
Drain bacon, reserving 2 tablespoons of drippings in the skillet. Crumble the bacon and set aside.
Step 3
Add onions to the drippings in the skillet over medium heat. Cook, stirring, until crisp-tender, about 2-3 minutes. Add water and salt to the skillet and bring to a boil.
Step 4
Stir in rice and cover. Remove from heat and let stand for 5 minutes. Fluff with a fork. Cool to room temperature.
Step 5
Add lettuce, mayonnaise, tomato and reserved bacon. Stir gently to combine.
