Add onions to the drippings in the skillet over medium heat. Cook, stirring, until crisp-tender, about 2-3 minutes. Add water and salt to the skillet and bring to a boil.
Stir in rice and cover. Remove from heat and let stand for 5 minutes. Fluff with a fork. Cool to room temperature.
Add lettuce, mayonnaise, tomato and reserved bacon. Stir gently to combine.

Bacon is a breakfast favorite, but what meal doesn’t taste better with a little bacon? Whether you like it crispy, smokey, maple glazed, thin- or thick-cut, bacon is always delicious. In this new take on your favorite sandwich combo, crispy bacon adds delicious flavor and exceptional crunch. The crispier the bacon here, the easier it is to crumble into pieces and sprinkle on top of your rice salad.
After cooking the bacon for this recipe, instead of cleaning the pan, use the drippings to cook the onions and rice. The drippings add loads of flavor! Let the flavors simmer together while the rice cooks in just 5 minutes. Let your rice cool and top it with ripe, chopped tomatoes, the crispy bacon, mayonnaise and chopped lettuce. For a fun variation, you can also try serving this dish as lettuce wraps.
