Cook the bacon in a large skillet set over medium-high heat until crisp, turning occasionally, about 5-7 minutes.
Drain bacon, reserving 2 tablespoons of drippings in the skillet. Crumble the bacon and set aside.
Add onions to the drippings in the skillet over medium heat. Cook, stirring, until crisp-tender, about 2-3 minutes. Add water and salt to the skillet and bring to a boil.
Stir in rice and cover. Remove from heat and let stand for 5 minutes. Fluff with a fork. Cool to room temperature.
Add lettuce, mayonnaise, tomato and reserved bacon. Stir gently to combine.

Bacon is a traditional breakfast favorite, but what meal doesn’t taste better with a little bacon? Whether you like it crispy, smokey, maple glazed, thin- or thick-cut, bacon is always delicious. In this new take on your favorite sandwich combo, crispy bacon adds delicious flavor and exceptional crunch to a rice salad. The crispier the bacon here, the easier it is to crumble into pieces and sprinkle on top of your dish.
After cooking the bacon for this recipe, instead of cleaning the pan, use the drippings to cook the onions and rice. The drippings add loads of flavor! Let the flavors simmer together while the rice cooks in just 5 minutes. Let your rice cool and top it with chopped, ripe tomatoes, the crispy bacon, mayonnaise and chopped lettuce. For a fun variation, you can also serve this dish as lettuce wraps.
