  • Cook bacon in large skillet on medium heat until crisp, turning occasionally.

  • Drain bacon, reserving 2 tablespoon of the drippings in skillet. Crumble bacon; set aside.

  • Add onion to drippings in skillet; Cook and stir until crisp-tender. Add water and salt; Bring to boil.

  • Stir in rice; cover. Remove from heat; let stand 5 minutes. Fluff with fork. Cool to room temperature.

  • Add lettuce, tomato, mayonnaise and reserved bacon; mix lightly.
