Ingredients

  • 1 cup Minute®Southwest Pinto Beans with White Rice & Vegetables Cups
  • 1/2 cup petite diced tomatoes
  • 1/3 cup frozen corn, thawed
  • 1/4 cup vegetable broth
  • 1 tsp chili seasoning
  • 1/4 cup shredded Cheddar cheese
  • 1 tbsp chopped onion
  • 1 tbsp sliced jalapeño (optional)

Instructions

  • Nothing warms you up on a cold day like a warm bowl of hearty chili. This delicious Vegetarian Chili is quick, easy and perfect for those cold days when you just want to curl up on the couch and stay inside.

    Step 1

  • Combine rice and beans, tomatoes, corn, broth and chili seasoning in a medium-sized, microwave-safe bowl.

    Step 2

  • Microwave on HIGH for 2 minutes. Remove from microwave and stir.

    Step 3

  • Top with cheese, onions and jalapeños, if using.
