This Chicken Shawarma with Jasmine Rice and veggies is served over pita bread for a quick and easy take on the Middle Eastern wrap.
In a microwave-safe bowl, stir together jasmine rice, chicken and spice blend; microwave on HIGH for 2 to 3 minutes or until heated through. Stir in yogurt.
Divide chicken and rice mixture between pitas, spooning down along the center of each pita, leaving a 1/2-inch border at either end. Top with lettuce and tomatoes. Fold up bottom over filling, then fold in sides and roll up tightly. To serve, cut in half.
As a variation, substitute za’atar seasoning for shawarma spice blend.
For a batch of homemade shawarma spice blend, mix together 1 tbsp each ground cumin, paprika and turmeric, 1 tsp each salt, pepper and garlic powder, and 1/2 tsp each ground cinnamon and cayenne pepper.
To soften pita bread, microwave for 30 to 45 seconds – this allows for easy rolling with no cracks or rips.
