This Shawarma Chicken and Rice Pita combines jasmine rice, veggies and chicken into a quick and easy take on the Middle Eastern-style wrap.

Stir together rice, chicken and spice blend in a medium, microwave-safe bowl. Microwave on HIGH for 2-3 minutes, or until heated through. Stir in yogurt.
Divide chicken and rice mixture between pitas by spooning down along the center of each pita, leaving a 1/2-inch border at either end. Top filling with lettuce and tomatoes. Fold bottom of pita up over filling, then fold in sides and roll up tightly. To serve, cut each pita in half.
For a different flavor profile, substitute za’atar seasoning for the shawarma spice blend.
To make a batch of homemade shawarma spice blend, mix together 1 tablespoon each ground cumin, paprika and turmeric, 1 teaspoon each salt, pepper and garlic powder, and 1/2 teaspoon each ground cinnamon and cayenne pepper.
