Ingredients

  • 1 cup Minute® Ready to Serve Brown & Wild Rice
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomato
  • 2 tbsp diced red onion
  • 2 tbsp spicy hummus
  • 1 egg, soft-cooked in microwave

Instructions

  • Skip the takeout! In just 5 minutes, you can enjoy Mediterranean-inspired flavors in this delicious Spicy Hummus Rice Bowl. Simply heat, combine and enjoy!

  • Heat rice according to package directions.

    Step 2

  • Toss rice with cucumber, tomato, and red onion. Top with a dollop of hummus and soft-cooked egg.

    Recipe Tips

    To make a soft-cooked egg in the microwave, place an egg in a microwave-safe bowl filled with hot water. Cover the bowl with a microwave-safe lid and microwave on HIGH for 4 minutes. Peel the egg and serve.

    For a hard-cooked egg, leave the egg immersed in hot water for an additional 2 minutes before peeling.

    Feel free to swap in mild hummus, or any flavored hummus you prefer, for the spicy hummus called for in the recipe.
