Step 1
Heat rice according to package directions and set aside.
Step 2
Coat a medium, microwave-safe bowl with nonstick cooking spray. Add the egg and sesame oil, if using, to the bowl and scramble lightly.
Step 3
Microwave egg mixture on HIGH for 30 seconds.
Step 4
Remove egg from microwave and stir to break up the cooked egg. Add the rice, peas and carrots, soy sauce, ginger and green onion. Microwave on HIGH for another 30 seconds. Stir and serve.
