Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1/3 cup leftover roast turkey, shredded
  • 1/3 cup leftover turkey gravy
  • 1/3 cup leftover Thanksgiving dinner vegetables, chopped
  • 1/2 cup leftover cheese, shredded and divided
  • 1/4 cup leftover turkey stuffing

Instructions

  • Step 1

    Heat rice according to package directions.

    Step 2

    Stir together rice, turkey, gravy, vegetables and half the cheese in medium bowl. Spoon into greased 2-cup microwave-safe casserole dish. Sprinkle with stuffing and remaining cheese. Cover with plastic wrap, pulling back a small area for venting. Microwave on High, for 60-90 secs or until heated through and cheese is melted.

    Step 3

    Serve with cranberry sauce.

    Recipe Tip

    This casserole is a great way to use up leftover cheese from holiday cheese platters. Cheddar, Swiss, fontina, gouda, Brie or mozzarella all work nicely in this recipe.
