  • 2 tbsp soy sauce
  • 1 tbsp packed brown sugar
  • 1/4 tsp garlic salt
  • 1/4 tsp ground ginger
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped, toasted cashews

  • 6 boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 green bell pepper, cut into chunks
  • 3 tbsp hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp packed brown sugar
  • 1/4 tsp garlic salt
  • 1/4 tsp ground ginger
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped, toasted cashews

Instructions

  • Whip up this saucy Cashew Sweet and Sour Chicken with Minute® Instant White Rice and enjoy a 30-minute meal that promises to satisfy your need for Chinese food. Topped with crunchy cashews, this mix of chicken, pineapple, peppers, cherry tomatoes and ginger is a sweet, savoury, utterly delicious weeknight meal. 

    Step 1

  • Prepare rice according to package directions; set aside.

    Step 2

  • Drain pineapple and reserve juice. Mix 1/4 cup juice with cornstarch; set aside.

    Step 3

  • Heat oil in a large skillet over medium-high heat. Add chicken and brown for 5 minutes.

    Step 4

  • Add the bell peppers and cook for an additional 3 minutes.

    Step 5

  • Stir in plain pineapple juice, hoisin sauce, soy sauce, brown sugar, garlic salt, ginger and cook for an additional 5 minutes, or until the internal temperature of the chicken reaches 165°F.

    Step 6

  • Add pineapple chunks, tomatoes and corn starch/juice mixture, Cook until the sauce thickens.

    Step 7

  • Serve over rice and top with cashews.
