Ingredients

  • 1 cup Minute® Ready to Serve Garlic & Olive Oil Jasmine Rice
  • 1 large bell pepper, split lengthwise and seeded
  • 1 cup frozen mixed vegetables, thawed
  • 1/2 cup marinara sauce
  • 1/3 cup shredded mozzarella cheese
  • grated Parmesan cheese (optional)

Instructions

  • With the perfect balance of grains and vegetables, these cheesy, vegetarian, Italian stuffed peppers are ready in just 10 minutes!

  • Step 1
    Heat rice according to package directions.

    Step 2
    Place pepper halves in a microwave-safe dish and microwave on HIGH for 1 minute.

    Step 3
    Combine rice, vegetables and marinara sauce in a medium-sized, microwave-safe bowl.

    Step 4
    Stuff rice mixture into pepper halves.

    Step 5
    Top pepper halves with mozzarella and Parmesan cheese, if using. Microwave on HIGH for 2 minutes.
