Ingredients

  • 1 cup Minute® White Rice
  • 3/4 cup oat milk
  • 1 ripe banana
  • 1 tbsp brown sugar
  • 1/4 tsp cinnamon
  • 1/8 tsp salt

Instructions

  • With just a few ingredients, including our Minute® Instant White Rice, you can prep this dessert and surprise everyone with a delicious vegan treat. Let the kids add their own toppings, like chopped nuts or chocolate chips, for a banana-sundae kind of experience!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Combine oat milk, banana, brown sugar, cinnamon and salt in a blender or food processor. Blend until smooth.

    Step 3

  • Combine banana mixture and rice together in a medium bowl. Divide mixture evenly between 4 glasses or small cups.

    Feeling fancy? Garnish each pudding with a dusting of cinnamon and a couple of slices of banana.

The best bananas for this recipe are ripe bananas that are developing some brown spots. Just don’t let your bananas sit too long and become too dark. After you’ve peeled the banana you can cut it into slices or mash it up.
