Ingredients

  • 1 cup Minute® White Rice
  • 1 ripe banana
  • ¾ cup oat milk
  • 1 tbsp brown sugar
  • ¼ tsp cinnamon
  • ⅛ tsp salt

Instructions

  • With just a few ingredients, including our Minute® Instant White Rice, you can prep this dessert and surprise everyone with a special, after-dinner vegan treat. Let the kids add their own toppings, like chopped nuts or chocolate chips, for a banana-sundae kind of experience!

    Step 1

  • Prepare Minute® Instant White Rice according to package directions and reserve.

    Step 2

  • Combine banana, oat milk, brown sugar, cinnamon and salt in a blender or food processor and blend until smooth.

    Step 3

  • Combine banana mixture with rice, mix until blended. For serving, garnish pudding with a dusting of cinnamon and slices of banana if desired. Great served warm or chilled.

The best bananas for this recipe are ripe bananas that are developing some brown spots. Don’t let them sit too long and become too dark, though. In between is just right. After you’ve peeled the banana you can cut it into slices or mash it up.
