Spiced Chocolate Rice Pudding Halloween Dirt Cups

Ingredients

  • 2 Minute® White Rice Cups
  • 2 cups milk
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3 cups vanilla pound cake, cubed
  • 1/2 cup chocolate cookie crumbs
  • Gummy worms and spiders for decorating

Instructions

  • These spooky layered dessert cups — chocolate and vanilla flavors punched up with pumpkin and cocoa — are boo-tiful to behold! 

    Step 1

  • In medium saucepan set over medium heat, cook rice, milk, cocoa powder, sugar and pumpkin pie spice at a simmer, stirring occasionally, for 10 to 15 minutes or until creamy and thickened slightly. 

    Step 2

  • Remove from heat; stir in vanilla and salt. Transfer to bowl and cover with plastic wrap, with plastic directly on surface of pudding so it doesn’t form a skin. Let cool completely, then refrigerate for 1 hour or until well chilled. 

    Step 3

  • In six 8-oz glasses, layer half the vanilla cake cubes. Top with half the chocolate pudding. Repeat layers. Divide chocolate cookie crumbs evenly on top and garnish with gummy worms and spiders. 

    Recipe Tip

    Substitute milk with chocolate milk to make this even more chocolatey.
