This simple and delicious rice pilaf features nutty, whole-grain flavor and a perfect mix of textures that you’ll love, including chewy and fluffy brown rice, creamy mushrooms and crunchy walnuts.
Heat oil in a medium saucepan over medium heat. Add onions and celery; cook for 3-5 minutes, or until crisp-tender, stirring occasionally.
Add mushrooms to saucepan. Cook for 3-5 minutes, or until mushrooms are tender, stirring occasionally.
Add broth; Stir and bring to a boil. Stir in rice and cover.
Reduce heat to medium-low and simmer for 10 minutes. Remove from heat and let stand for 5 minutes.
Add walnuts and parsley and stir to combine.
