  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1/4 cup chopped celery
  • 1 1/2 cups sliced mushrooms
  • 1 can (14.5 oz) chicken broth
  • 2 cups Minute® Brown Rice
  • 1/2 cup walnuts, toasted and chopped
  • 2 tbsp chopped fresh parsley


  • This simple and delicious rice pilaf features nutty, whole-grain flavor and a perfect mix of textures that you’ll love, including chewy and fluffy brown rice, creamy mushrooms and crunchy walnuts.

    Step 1
    Heat oil in a medium saucepan over medium heat. Add onions and celery; cook for 3-5 minutes, or until crisp-tender, stirring occasionally.

    Step 2
    Add mushrooms to saucepan. Cook for 3-5 minutes, or until mushrooms are tender, stirring occasionally.

    Step 3
    Add broth; Stir and bring to a boil. Stir in rice and cover.

    Step 4
    Reduce heat to medium-low and simmer for 10 minutes. Remove from heat and let stand for 5 minutes.

    Step 5
    Add walnuts and parsley and stir to combine.
