Ingredients

  • 1 tbsp canola oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 boneless, skinless chicken breasts
  • 1 can (14.5 oz) low-sodium chicken broth
  • 2 cups Minute® Brown Rice
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 1 cup frozen peas

Instructions

  • A perfect weeknight meal, this hearty and satisfying pilaf featuring brown rice, chicken,
    mushrooms and peas is ready in less than 30 minutes.
    Step 1
    Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Add
    chicken to skillet, and cover. Cook for 4 minutes on each side, or until chicken is cooked through
    (165°F).
    Step 2
    Remove chicken from skillet. Add chicken broth and rice to skillet and bring to a boil.
    Step 3
    Stir in mushrooms, onions and peas. Return chicken to skillet, and cover.
    Step 4
    Reduce heat to medium-low. Cook for 10 minutes. Remove from heat and let stand for 5
    minutes.
    Recipe Tips:
    For a simple side, serve this dish with a mixed green salad. For even faster prep, substitute 1 package (1 lb) of grilled chicken breast strips for the uncooked chicken called for in the recipe and omit the canola oil. Skip Step 1, then continue with the remaining steps of the recipe.
