Heat oil in a large skillet over medium-high heat. Add chicken; cover. Cook for 4 minutes on each side, or until chicken is cooked through (170°F).
Remove chicken from skillet; cover to keep warm. Add chicken broth to skillet and bring to a boil.
Stir in rice, mushrooms, onions and peas. Top with chicken; cover.
Reduce heat to medium-low. Cook for 10 minutes. Remove from heat and let stand for 5 minutes.
For a simple side, serve this dish with a simple mixed green salad.
