  • Rub chicken with adobo seasoning; set aside. Heat 1/4 cup of the dressing in large skillet on medium-high heat.

  • Add chicken; Cook 7 to 10 minutes or until lightly browned, turning occasionally.

  • Remove chicken from skillet; cover to keep warm. Drain and wipe out skillet with paper towels.

  • Add remaining 1/4 cup dressing and all remaining ingredients except chicken and rice to skillet; Cook and stir 3 minutes.

  • Reduce heat to medium-low. Return chicken to skillet; simmer, covered, 45 minutes or until chicken is cooked through.

  • Spoon over rice to serve.


Recipe Tips

How to make your own Adobo seasoning: Mix 1 tablespoon each garlic powder, onion powder, dried oregano leaves and pepper, and 1/2 teaspoon salt. Store in airtight container at room temperature.
