This incredibly tasty Caribbean Chicken recipe combines a unique blend of zesty ingredients with savory seasonings like adobo. Serve over a bed of fluffy Minute® Instant White Rice and enjoy a tasty and complete meal tonight.
Step 1
Prepare rice according to package directions. Set aside.
Step 2
Rub chicken with adobo seasoning and set aside. Heat 1/4 cup of dressing in a large skillet over medium-high heat.
Step 3
Add chicken and cook for 7 to 10 minutes, or until lightly browned, turning occasionally.
Step 4
Remove chicken from skillet and cover to keep warm. Drain and wipe out skillet with paper towels.
Step 5
Add remaining dressing, olives, vinegar, capers, onions, garlic and bay leaf to skillet. Bring to a boil, and cook, stirring, for 3 minutes.
Step 6
Reduce heat to medium-low. Return chicken to skillet and cover. Simmer for 45 minutes, or until chicken is cooked through.
Step 7
Spoon chicken and sauce over rice to serve.
