This incredibly tasty Caribbean Chicken dish has a unique combination of zesty ingredients and savory seasonings, like adobo. Serve this chicken over a fluffy bed of Minute® Instant White Rice and enjoy a tasty and complete meal tonight.
Rub chicken with adobo seasoning. Heat 1/4 cup of dressing in a large skillet over medium-high heat.
Add chicken and cook for 7-10 minutes, or until lightly browned, turning occasionally.
Remove chicken from skillet and cover to keep warm. Drain and wipe out skillet with paper towels.
Add remaining dressing, olives, vinegar, capers, onions, garlic and bay leaf to skillet. Bring to a boil, and cook, stirring, for 3 minutes.
Reduce heat to medium-low. Return chicken to skillet and cover. Simmer for 45 minutes, or until chicken is tender and cooked through.
When the chicken is almost ready, prepare rice according to package directions.
Spoon chicken and sauce over rice.
