Ingredients

  • 1 cup Minute® Ready to Serve White Rice
  • 1 breaded chicken tender, sliced
  • 1 tbsp barbecue sauce
  • 1/4 cup frozen corn, thawed

Instructions

  • In less than 10 minutes you can have delicious BBQ chicken served with our fluffy Minute® Ready to Serve White Rice.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • In a small, microwave-safe bowl, combine chicken and barbecue sauce. Microwave on HIGH for 2-3 minutes.

    Step 3

  • Add corn. Microwave on HIGH for 1 minute.

    Step 4

  • Serve rice topped with chicken mixture.

How to Make Your Own Breaded Chicken

Although you can buy your breaded chicken tenders from the supermarket, it’s not that difficult to make them yourself at home. With this method you can make a nice, crunchy bread coating that will stay put on your chicken no matter what.

Before cooking your chicken make sure that it is dry. Do this either by patting it down with paper towels or by leaving it in the refrigerator uncovered until it dries out. From there, season your chicken with salt and pepper then cover in flour. Next, dip the chicken in a bowl of beaten eggs. Once the chicken is coated with egg, you can cover it with breadcrumbs. For best results leave the coated chicken in the refrigerator for around 30 minutes before cooking.
