No Cream Creamy Broccoli Soup

Ingredients

  • 1 tbsp canola oil
  • 1 cup chopped carrot
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 2 cans (14.5 oz each) low sodium chicken broth
  • 1/2 tsp black pepper
  • 4 cups broccoli florets (about 2 small bunches)
  • 1/2 cup Minute® Premium Rice
  • 2 cups milk
  • 1/4 cup grated Parmesan cheese

Instructions

    Step 1

  • Heat oil in a large saucepan over medium-high. Cook carrots, celery and onions for 5-7 minutes, or until starting to soften.

    Step 2

  • Add broth and pepper to saucepan; stir. Bring to a boil.

    Step 3

  • Stir in broccoli and rice. Reduce heat to medium-low. Simmer for 10-15 minutes, or until vegetables soften, stirring frequently.

    Step 4

  • Add soup, in batches, to a blender or food processor; cover. Blend until puréed.

    Step 5

  • Return soup to saucepan. Add milk and cheese. Cook until heated through, stirring occasionally.

    Recipe Tips

    If you like to serve your soup with a side of bread for dipping, why not liven things up by making garlic bread? Simply spread some garlic butter on each slice of bread and bake at 350°F until golden. The buttery garlic bread tastes amazing with this soup!

    For a thicker soup, add in some potatoes while cooking the vegetables.

    No broccoli on hand? Substitute 4 cups of frozen peas, chopped asparagus or chopped leeks for the broccoli.

Although the flavor here is just like in a traditional broccoli soup, there are a few updates to this hassle-free, Minute® Rice version. Usually, broccoli soup calls for heavy cream for a rich texture. Cooked with milk, our version is lighter, but still smooth and creamy thanks to Minute® Instant Premium Rice. The best part is, you don’t have to worry about cooking the rice in advance, as it can be simmered in the chicken broth with the other ingredients.

Most traditional recipes also call for Cheddar cheese. This soup uses grated Parmesan cheese for a more sophisticated taste. The melted Parmesan cheese also brings an Italian flair to the soup that your family will love.

If you’ve already read through the cooking instructions, you know that all of the ingredients are blended in a food processor. However, for a bit of added texture, we suggest leaving a few broccoli chunks intact.
