  • 1 tbsp vegetable oil
  • 1 green bell pepper, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 lb boneless, skinless chicken breast, cut into strips
  • 2 tbsp lite creole seasoning, divided
  • 1/2 lb cooked sausage, sliced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup water
  • 1 can (8 oz) low sodium tomato sauce
  • 1/2 lb medium shrimp, peeled and deveined
  • 2 cups Minute® Brown Rice


  • Enjoy the creole flavors of a traditional Louisiana dish with this tasty and simple Jambalaya Skillet loaded with shrimp, chicken, sausage, tomato and green bell peppers.

    Step 1
    Heat oil in a large nonstick skillet over medium-high heat. Add bell peppers, onions, and celery. Cook, stirring, for 3-5 minutes, or until vegetables are crisp-tender.

    Step 2
    Toss chicken with 1 tablespoon creole seasoning. Add to skillet. Sauté 2 to 3 minutes, or until cooked through.

    Step 3
    Add sausage, tomatoes, water, tomato sauce, shrimp and remaining 1 tablespoon creole seasoning; mix well. Bring to a boil. Stir in rice; cover. Simmer 10 minutes.

    Step 4
    Remove from heat. Let stand for 5 minutes. Fluff with a fork.

    Recipe Tips
    Substitute 2 packages (6 oz each) grilled chicken breast strips for fresh chicken strips. Add chicken to skillet along with sausage, etc. Continue as directed.
