This Hearty Rice Minestrone Soup is pure comfort and warmth in a bowl with beans, tomatoes and spices. And it comes together in just 35 minutes in your Instant Pot!
Prepared in an Instant Pot multicooker, this rustic Italian soup makes a deliciously satisfying meal for the whole family.
Step 1
Set Instant Pot to Sauté setting over High heat. Heat oil; cook carrot, celery, onion, garlic, thyme, oregano, salt and pepper for 3 to 5 minutes, or until starting to soften. Stir in broth and tomatoes.
Step 2
Lock the lid in place and move the pressure valve to Sealing. Select Pressure Cook on High for 10 minutes. Once cooking is complete, manually release pressure according to manufacturer’s instructions. Carefully remove lid.
Step 3
Set Instant Pot to Sauté setting over High heat; bring to a boil. Stir in beans and kale; cook for about 2 minutes, or until softened.
Step 4
Stir in rice. Set Instant Pot to Warm setting. Cover and let stand for 5 minutes.
Step 5
Stir in Parmesan, basil and red chili flakes.
