Heat oil in a large saucepan over medium-high heat. Sauté chicken for 5-6 minutes, stirring frequently, until browned.
Add vegetables, water, broth and salad dressing mix. Bring to a boil. Reduce heat to low and cover. Simmer for 5 minutes.
Stir in rice and parsley, and cover. Remove from heat. Let stand for 5 minutes.
If you prefer, replace the fresh vegetables in the recipe with 1 package (10 oz) frozen mixed vegetables, thawed.
To serve, sprinkle each bowl of soup with grated Parmesan cheese and serve with toasted bread.
