  • 1 tsp canola oil
  • 1/2 lb boneless, skinless chicken breast, cut into 1/2-inch cubes
  • 2 cups assorted cut-up vegetables (sliced carrots, broccoli florets, chopped red bell pepper)
  • 2 cups water
  • 1 can (14.5 oz) chicken broth
  • 1 pkg (0.7 oz) Italian salad dressing and recipe mix
  • 1 cup Minute® White Rice
  • 2 tbsp chopped fresh parsley


  • This hearty Chunky Chicken Vegetable Soup with Rice is a warming bowl of goodness that the whole family will enjoy! It’s loaded with chicken, hearty Minute® Instant White Rice and tons of veggies to give you a boost when you need it most.

    Step 1

  • Heat oil in a large saucepan over medium-high heat. Sauté chicken for 5-6 minutes, stirring frequently, until browned.

    Step 2

  • Add vegetables, water, broth and salad dressing mix. Bring to a boil. Reduce heat to low and cover. Simmer for 5 minutes.

    Step 3

  • Stir in rice and parsley, and cover. Remove from heat. Let stand for 5 minutes.

    Recipe Tips

    If you prefer, replace the fresh vegetables in the recipe with 1 package (10 oz) frozen mixed vegetables, thawed.

    To serve, sprinkle each bowl of soup with grated Parmesan cheese and serve with toasted bread.
