Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice
  • 1 tbsp vegetable oil
  • 1/4 cup button mushrooms, sliced
  • 1/4 cup diced onion
  • 1/4 cup cooked, sliced beef
  • 1/2 tsp thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 cups beef broth

Instructions

  • Even on the coldest winter days, you can trust that a big bowl of Mushroom Soup with Beef will warm you up! Ready in less than 10 minutes, this simple soup – packed with mushrooms, beef, and nutty brown rice –  will leave you satisfied.

    Step 1

  • Heat rice according to package directions and divide between 2 bowls.

    Step 2

  • Heat oil in a small saucepan over medium heat. Add mushrooms and onions and sauté for 3 minutes.

    Step 3

  • Add beef and season with thyme, salt and pepper.

    Step 4

  • Add beef broth and simmer soup for 2 minutes.

    Step 5

  • Divide soup between bowls with rice.

    Recipe Tip

    Be careful with adding salt, many beef broths are quite salty.
