  • 1 cup Minute® Ready to Serve Brown Rice
  • ¼ cup white onion, diced
  • ¼ cup button mushrooms, sliced
  • 1 tbsp vegetable oil
  • ¼ cup cooked sliced beef
  • 2 cups beef broth
  • ½ tsp thyme
  • salt
  • pepper


  • Even on the coldest winter days, you can trust that a big bowl of Mushroom Soup with Beef will warm you right up! Ready in less than 10 minutes, this simple soup – packed with mushrooms, beef, and nutty Brown Rice –  will leave you satisfied.

    Step 1

  • Heat rice according to package directions and split rice between 2 bowls.

    Step 2

  • Sauté onions and mushrooms in 1 tbsp of vegetable oil for 3 minutes.

    Step 3

  • Add beef to pot and season with thyme. Season with salt and black pepper (if desired).

    Step 4

  • Pour in beef broth and simmer soup for 2 minutes.

    Step 5

  • Serve over rice

    Recipe Tip

    Be careful with adding salt, many beef broths are quite salty.

Feel free to experiment by mixing and matching different mushroom varieties. It may be surprising to learn that brown buttons, crimini, and portobellos are the same mushroom! Like a fine wine, mushrooms develop richer flavor over time.
